Corn Cutlets - by bela






Ingredients   
:- 
   Sweet corn - 1 kg.
   potatoes - 400 gms.
   arrowroot flour - 100 gms
   coriander - 1/2 cup (finely chopped)
   mint - 1/2 cup (finely chopped)
   peanuts 1/2 cup (finely ground)
  grated coconut - 1/2 cup
  rice flour - 1/2 cup
  semolina - 1/2 cup
  lemon juice - 2 tsp.
  garam masala powder - 1/2  teaspoon
  asafoetida - 1/2 tsp.
  Ginger - green chilly paste – two table-spoons 
  Edible oil 
  salt - as per taste
 

                                                                                                         Method- 

1 . Seperate the corn from the cobs and grind it into a paste.
2 .  Heat 1 tbsp oil in a kadai, add asafoetida and corn paste and roast for sometime.
3 . Boil the potatoes , peel and mash them.
4 . Take a large plate and add the paste of corn , potatoes and all the remaining ingredients.
5 . Mix all ingredients properly and shape it into cutlets.
6 . Add some water into arrowroot flour and make a thin paste.
7 . Dip the cutlets into the paste and deep fry into the oil.
8 . Serve hot spicy cutlets with green chutney and tomato ketchup.

Ingredients   :-  
Wheat flour -  4 cups
Jaggery - 3 cups (finely chopped) 
ghee - 2 cups
Almonds - 1/2 cup (coarsely crushed)
Dry coconut  - 1/2 (thickly grated)
Sauth  (dry ginger powder) - 50 gms
cardamom - 5 - 6 (powdered)


 
         
Method

 1 . Heat ghee in a kadai and roast wheat flour until it turns pink.
 2 . Add sauth, almonds, cardamom into the flour and roast for a few minutes.
 3 . Add chopped jaggery and turn off the gas flame .
 4 . Keep stirring until the jaggery dissolves completely.
 5 . Grease a plate and spread it evenly .
 6 . Cut into pieces after it cools down.
 7 . In Vaishnav households Gol Papdi Samagri is prepared for Thakorji during winters. It has special significance  of serving as bhog on Raksha Bandhan.
