Spicy Tapeli Nu Saak  - by bela








Ingredients  :-  
  
   Chana daal – 4 cups
  Onions - 1 kg.
potatoes - 300 gms.
ratalu (violet yam) - 300 gms.
  Ginger-garlic paste –two tea-spoons 
   Fresh  mint  leaves - 1 cup (finely chopped)
  Cinnamon - 1/2 inch
 black pepper - 4 - 5
 cloves -  4 - 5
bay leaf - 1
cumin seeds - 1 tsp.
badia - 2 - 3
garam masala - 1 tsp.
 Edible oil - 250 gms.
  salt  - as per taste
 red chilli powder - 1 tsp.
 turmeric powder - 1/2 tsp.
 coriander powder - 1 tsp.
 
  1.    Soak  chana daal  for 5 - 6 hours and crush it coarsely upto a thick consistency.
  2.  Add 4 - 5 grated onions, mint, red chilly powder, ginger, garlic paste, salt and make wadas.
  3. Deep fry potatoes and ratalu.
  4.  Heat oil in a pressure  cooker and add pepper,cloves ,cinnamon and badia.
  5. Chop remaining onions into big pieces and saute till they turn pink.
  6. Then add red chilli powder , turmeric powder ,coriander powder, garam masala.
  7.  Add ginger garlic paste and stir 
  8. Roast until it turns into a gravy. 
  9.  Add 1 litre of water into the gravy and add deep fried wada deep fried ratalu and potatoes .
  10. Add somemore water as per 1/2 inch above the ingredients and cook upto 2 whistles.
  11. Tasty, spicy, yummy,authentic Surti Tapeli Nu Saak is ready to serve with parathas.

Ingredients   :-  

ghee - 200 gms
Almonds - 1 cup (coarsely crushed)
wheat flour - 1 cup
selimona (ravo) - 1/2 cup
 sugar -  1 cup ( powdered)
 Khas khas - 20 gms.
Nutmeg - 1/4
Cardamom - 3 - 4 (powdered)
 
         
Method

1 . Heat  ghee in a deep kadaiand roast wheat flour and selimona until it turns pinkish in colour.
2 . Add crushed almonds and keep aside till it cools down.
3 . Add powdered sugar, cardamom and nutmeg.
4 . Make small balls and roll in khas khas.

Ingredients  :


Papdi - 500 gms.
potatoes - 200 gms
ravaiya - 200 gms (small sized brinjal)
sweet potatoes - 100 gms.
ratalu - 200 gms. (violet yam)
coriander - 2 cups
 Ginger - chilly - garlic  paste – 3 tbsp.
chopped green garlic - 2 cups
chopped methi bhaji - 1 cups
crushed peanuts - 1 cup
grated coconut - 1 cup
khas khas - 1 tsp.
sesame seeds - 1 tsp.  
Edible oil - 1/2 kg. 
Salt -as per taste
Turmericpowder - 1/4 teaspoon
coriander powder - 1 teaspoon
garam masala - 1/2 tsp.
sugar -  1 teaspoon

Method

  1. Mix  methi bhaji , salt, oil, Ginger - chilly - garlic  paste,sugar, turmeric powder in coarse         wheat flour .
  2.  Add some water and mike a dough upto a medium consistency  and make muthias and deep fry lightly.
  3. Prepare a mixture of coriander, green garlic, grated coconut, crushed peanuts, khas khas, sesame seeds, salt, turmeric powder,one tbsp oil,sugar.
  4. Take oil in a frying pan and deep fry potatoes, yam and sweet potatoes lightly.
  5. Make a cut in brinjal and stuff the mixture.Mix some of the mixture to papdi.
  6. In a large pressure cooker add oil  asafoetida , papdi and place stuffed brinjal, potatoes, yam, sweet potatoes, muthias and cover it with a plate filled with little water .
  7. Let it steam for sometime then add the remaining mixture and the hot water in the plate.
  8. Close the lid of the pressure cooker and cook upto 2 whistles.
  9. Garnish with coriander and green garlic, cashewnuts and kismish.

Suva Bhaji

 Ingredients  

 chopped cholai bhaji - 200 gms.
 chopped methi bhaji - 200 gms. 
 chopped palak (spinach) - 200 gms.
 chopped suva bhaji - 200 gms.
 chana daal  -  1 fistful
 moong daal - 1 fistful
chopped brinjal - 1 cup
chopped onions - 1 cup
chopped tomatoes - 1 cup
lemon juice - 1 tsp
 Ginger - chilly - garlic  paste –two tea-spoons 
 Edible oil - 3 table spoons  
 Salt -as per taste
 Turmericpowder - 1/4 teaspoon
 asafoetida  - 1/4  teaspoon

Method

  1. Cook chana daal, moong daal, brinjal and all the bhajis in 2 cup of water in a pressure cooker upto  3 - 4 whistles.
  2.  Heat oil in a pan and saute onion till it changes colour.
  3. Add tpmatoes and let it cook until they soften.
  4. Add salt, ginger chilly garlic paste, turmeric powder, asafoetida and cook until oil seperates.
  5. Churn daal and bhaji and add it into the onion tomato paste and mix properly.
  6. Add lemon juice and let it cook until the water dries up.
  7. Serve it hot with paratha

Spicy Yummy Vegetable Wada - by bela 

Ingredients  :-

 Moongdaal – 4 cups
Besan - 2 tbsp
chopped spring onions -1/2  cup
chopped onion - 1 cup
large boiled potato - 1
spinach - 1/2 cup (finely chopped)
chopped mint leaves  - 1 table spoon
Ginger - chilli   paste –two tea-spoons 
Edible oil - for deep frying  
Salt -as per taste
Turmericpowder - 1/4 teaspoon
coriander powder - 1 tsp
Asafoetida - 1/2 teaspoon
black pepper powder - 1/2 teaspoon
red chilly powder - 1/2 tsp
amchur (dry mango powder) -  1/2 tsp
garam masala powder - 1/4 tsp



Ingredients for Chutney
Chopped coriander - 1 cup
Mint leaves - 10 to 15 leaves
Green chilly - 4 to 5
Garlic -  6 - 8 cloves
Dalia ( split roasted grams without outer shell) - 1 table spoon
Salt as per taste
Cumin seeds - 1/4 teaspoon
Lemon juice - half teaspoon

Method-

  1.  Soak moong daal  (three hours)
  2.  Grind it into a coarse paste upto a thick consistensy .
  3. Add salt , turmeric and coriander powder, amchur , garam masala, pepper powder , asafoetida , chopped onions , spring onions , ginger - chilly paste ,spinach, mashed potato, mint leaves and mix properly .
  4. Heat oil in a deep frying pan .
  5. Add one tablespoon of hot oil into the batter.
  6. Mix it properly and make daal wada .
  7. Serve it with green chutney , tomato ketchup , deep fried green chillies and sliced onions . 


For Chutney 
Mix all the above given ingredients for the chutney and grind it into a fine paste.
Tasty chutney to serve with vegetable wada is ready.

Ingredients  :- 
  
  chopped tomatoes -  1 kg 
  brown vinegar - 1/2 big bottle
  garlic  -  125 gms.
  ginger - 65 gms.
  green chillies - 125 gms.
   Edible oil - 1/2 kg.
  salt - 30 gms.
  red chilli powder - 65 gms.
  turmericpowder - 1/2 teaspoon
 coriander powder -  1 teaspoon
  mustard kuria - 65 gms.
  methi (fenugreek) kuria - 2 tbsp
  curry leaves - 1 cup


                                                                                                                  Method- 

 1 .  Make a fine paste of ginger and garlic and add mustard and methi kuria, little vinegar and mix thoroughly.
 2 . Slit the green chillies into two halves.
 3 . Cut tomatoes into 4 pieces and grind'
 4 . Heat oil in a pan and add  the paste of ginger garlic and the other ingredients .
 5 . Roast it properly and add crushed tomato paste.
 6 . After 1 boil add the remaining vinegar, salt, turmeric and red chilly powder, slit green chillies,curry leavesand keep stirring until the oil seperates.
 7 . Store in an air tight container.

Ingredients  
 :- 
   tuvar daal - 2 cups
  chopped tomatoes -  2 cups
  cauliflower - 250 gms 
  chopped onions - 1 cup
  garlic ginger green chilly paste  – two table-spoons 
   Edible oil - 1 table-spoons
  ghee - 1 tbsp
  salt - as per taste
  cloves - 3 - 4
  cinnamon 1/2 inch

                                                                                                                  Method- 

  1 . Add 1 cup tomatoes in tuvar daal in a pressure cooker and cook upto 4 - 5 whistles.
  2 . Chop cauliflower into big pieces and par boil it in a vessel.
  3 . Heat ghee and oil in a pan add cloves, cinnamon add onions and saute until it turns pink.
  4 . Add remaining 1 cup of tomatoes and let it cook until they soften.
  5 . Then add asafoetida,  garlic ginger green chilly paste, salt, turmeric powder and keep stirring.
  6 . Add tuvar daal and cauliflower into the pan and stir properly and let it boil.
  7 . Serve it hot with basmati rice.

Ingredients  :- 

regular wheat flour - 2 cups
selimona - 2 tablespoon
maida - 2 cups 
green peas - 500 gms. (coarsely crushed)
chopped coriander - 1 cup
coconut - 1 cup (grated)
Ginger - chilly paste - 2 tbsp.
lemon juice - 2 tsp.
Edible oil -  for deep frying  
Salt -as per taste
sugar -  2 tsp

Method

  1. Mix wheat , maida and selimona (ravo) flour .
  2.  Add some salt, oil. 5 - 6 drops of lemon juice, water and make a dough upto a medium consistency  and keep aside.
  3. Crush the green peas coarsely.
  4. Add 2 tbsp oil in deep frying pan and roast green peas until they soften.
  5.  After it cools add salt, ginger chilly paste,  sugar,  grated coconut, coriander, lemon juice and mix thoroughly.
  6. Make puri of medium size add the stuffing and make kachoris.
  7. Deep fry the kachori until they turn crisp.
  8. Serve with green chutney and tomato ketchup.
